"When asked which region's cuisine is my specialty to cook, I cannot settle on a single culture's dishes. The beauty of food is that, as humans, we all need it, and the ritual of cooking has been passed down for as long as time. It is the chef's job to decisively pair the most appropriate method of cooking with fresh local ingredients, while most importantly creating a memorable and unique dining experience. A distinctly present cuisine is born by utilizing cooking techniques from multiple regions and cultures, and applying them to fresh local ingredients."
